Yields approximately 20 biscotti
INGREDIENTS
- 2 1/4 cups of flour
- 1/2 cup cocoa powder
- 1 1/4 cups sugar
- 1 teaspoon baking powder
- 3 large eggs
- 1/4 cup heavy cream
- 3/4 cup pistachios
- 1/2 cup semi-sweet chocolate chips
DIRECTIONS
- Preheat oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- In the bowl of a stand mixer fitted with a paddle attachment, stir together flour, cocoa, sugar and baking powder.
- Add the eggs and heavy cream.
- Mix on medium speed until the dough comes together, about 2 minutes.
- Stir in the pistachios and chocolate chips.
- Divide the dough into 3 equal parts and roll into 3 logs each about 8 1/2 inches by 3 inches.
- Place in oven, bake 20 minutes and remove.
- Allow to cool 5 minutes and slice logs into about 1 1/4-inch thick pieces.
- Lower heat to 300. Return the slices to the cookie sheet cut side down and bake for 20 minutes, turning after 10 minutes.
- Allow to cool and store in an airtight container.
