Chocolate Pistachio Biscotti

Yields approximately 20 biscotti

INGREDIENTS

  • 2 1/4 cups of flour
  • 1/2 cup cocoa powder
  • 1 1/4 cups sugar
  • 1 teaspoon baking powder
  • 3 large eggs
  • 1/4 cup heavy cream
  • 3/4 cup pistachios
  • 1/2 cup semi-sweet chocolate chips

DIRECTIONS

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.
  • In the bowl of a stand mixer fitted with a paddle attachment, stir together flour, cocoa, sugar and baking powder.
  • Add the eggs and heavy cream.
  • Mix on medium speed until the dough comes together, about 2 minutes.
  • Stir in the pistachios and chocolate chips.
  • Divide the dough into 3 equal parts and roll into 3 logs each about 8 1/2 inches by 3 inches.
  • Place in oven, bake 20 minutes and remove.
  • Allow to cool 5 minutes and slice logs into about 1 1/4-inch thick pieces.
  • Lower heat to 300. Return the slices to the cookie sheet cut side down and bake for 20 minutes, turning after 10 minutes.
  • Allow to cool and store in an airtight container.
